Tonight's dinner offering... a wonderful homemade lasagna. Vegetarian, not vegan, and NO ONE complained about the absence of meat! This picture does not do it justice - layers of pasta, red sauce and a cheesy bechamel sauce. No, no ricotta, or cottage cheese. This, apparently, is what lasagna is supposed to taste like, and it was yummy! 2 big people, 2 mediums and a small and there is enough left for lunch tomorrow, or a snack tonight for Scott if I don't hide it well enough in the fridge.
Last night was the culmination of a very long weekend+. Our PTO held it's annual potluck, though this executive decided that a mouthful meeting was necessary. Horse%$#@. They accomplished as much at this meeting as any other. Nothing. But I digress, back to food. I had planned to make a gingerbread cheesecake. Sounds yummy, no? NO! It was awful! I had to toss it, it was so bad, and whip together something else. And the something else was truly SOMETHING ELSE! Yumm! Warm gingerbread with caramel sauce and whipped cream. The dinner meeting might have got a few people worked up, but boy they left smiling anyway. My work, there, was done. :o) No pictures of the gingerbread, guess I'll have to make another one.
