Well, it's a holiday weekend, the perfect time for a foodie flashback. This salad is gross, I can't stand it. It was one of the first things I made when we were just married that wasn't something I'd grown up cooking. I don't remember where it came from, but *I think* it was in the book that came with a honkin' big Moulinex food processor I bought at Honest Ed's in Toronto.
As I said, I don't like it. At all. I haven't made it for a while, and didn't make it for a LONG time because, not liking it, I guess I forgot about it. But I came across the recipe a year or so ago, and well, it is a hot dog holiday, so I guess I'll make some this weekend.
Macaroni and Cheese Salad
- 2 cup fusilli or ruffles pasta
- 1/2 pound Cheddar cheese, shredded
- 2 stalk celery, chopped very fine
- 1/2 medium onion, chopped very fine
- 3/4 cup Miracle Whip
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup milk
- 2 spoonfuls green relish
Cook, drain and cool the pasta. In a good sized bowl, combine everything else, then stir in the drained pasta. It should be very soupy; if not, add more milk. Cover and refrigerate at least 3 hours, overnight is better. The pasta will absorb the dressing - if it's too dry, add a little extra Miracle Whip or some sour cream.
Sounds gross huh? You should see it. ;o)

Oh, did I forget to mention? Scott LOVES it! He'll eat the whole thing over a matter of days and be soooo happy he doesn't have to share with anyone.
I would leave out the cheese, but I grew up on stuff like this and like it -- we always called it pasta tuna salad and added a can of tuna and like I say left out the cheese. Karen
