This is my dear friend Laurna's recipe - I think she adapted it from one in Harrowsmith. The cookies are scrumptious - I have yet to meet someone who doesn't like them, even someone who claims to HATE coconut.
Today's batch actually doesn't have coconut or walnuts. I got to that point and the pantry was bare. :o( And I switched out the chocolate chips for Hershey Kissables. I'm sure someone will eat them.
Laurna's Chocolate Chip Cookies
3/4 soft butter or margarine (even melted is fine)
1 cup packed brown sugar
1/2 cup white sugar
1 large egg
1 tsp vanilla
2 tbsp water
1 tsp salt
1 tsp baking soda
2 cups all purpose flour (feel free to swap in up to half whole wheat)
1 cup quick (not instant) oats
1/2 cup shredded coconut
1/2 cup chopped walnuts
1/2 cup (or more) semi-sweet chocolate chips
Beat butter together with brown and white sugar until the grainy sound from the sugar goes away. Add egg, water, and vanilla and stir until blended. Mix the salt and soda with the flour and stir into the butter and eggs mixture. Stir in the oats, coconut, walnuts and chocolate and stir until well combined.
Drop spoonfuls onto a parchment lined cookie sheet. Bake at 350ยบ for10-12 minutes or until browned around the edges, remove to cool on wire racks.
ETA - they aren't nearly as good without the coconut.

Did you really use a spoon to drop those cookies?
These do look great. The recipe looks like the basis for "Kitchen Sink" cookies, so I'd guess that you could add (almost) anything you like to them.
Ah, baking cookies is the best way to get the whole house to smell great.
