A Whole Bushel of Apple Muffins
Maybe not a bushel, but this recipe makes 18 nice sized (or 12 BIG) muffins. And they're yummy, and make your house smell fabu!
Apple Muffins
1/2 cup softened butter
2/3 cup sugar
2 eggs
1 tsp vanilla
3 large apples (peel, core, and chop 2, grate (peel yes, core no) the third)
1/2 cup yogurt
1 cup unbleached flour
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 generous tsp cinnamon
1/2 cup (or more) raisins, dried cranberries, walnuts, pecans if desired
Preheat oven to 375ยบ, line 18 muffin cups. For bigger muffins, line 12, and spray the top of the muffin pan with non-stick spray. Stir sugar into butter, then add eggs, vanilla, all the apples, and yogurt. Mix the dry ingredients together, then stir into the apple mixture. Add the nuts or dried fruit if you wish. This batter will be quite thick.
Spoon into lined muffin tins - they'll be full, especially if you're making only 12. Bake for 15-20 minutes or until rounded and golden. (Or until you just can't stand the wonderful smell any longer!)
