I made scones this morning. As per usual, I had to hunt for the recipe. I have it written on an index card, but where that index card gets put from one baking session to the next is pretty random. So that I don't find myself recipe-free at some scone-jonesing point in the future, I shall share it here. Then you can all make scones too! Brigitte is my friend Jackie's Irish mother in-law.
Brigitte's Scones
1 3/4 cup all purpose flour
3 tbsp sugar
2 1/2 tsp baking powder
1/2 tsp salt
2/3 cut cold butter
1 lightly beaten egg
4-5 tbsp milk or cream
1/2 cup dried apricots, cherries, cranberries, or other dried fruit, or chocolate chips, nuts, whatever you like.
Stir together flour, sugar, baking powder, and salt. Using a pastry blender or your fingers, cut in butter until coarse. Holding back a little of the beaten egg, add egg, cream, and fruit (or whatever) all at once, adding a little more milk or flour to form a stiff dough. Turn out and knead 3 or 4 times, then form into a disc about 9" across. Cut into 8 wedges and separate on a parchment lined baking sheet. Brush with reserved egg or a little cream. Bake at 400ยบ for 10-12 minutes until golden.
Might I suggest cherries and chocolate. Yum!

Thank you so much for posting this recipe. Just the other day I was looking at my many varieties of partial-bags of dried fruit and wondering what I could do with them. Scones! Cool beans!
