I'm posting this here because, like all my recipes, I keep losing it, then having to scour the earth to find it. Along with a loaf of No Knead Bread, it's what we're enjoying for dinner tonight.
Chicken and Spinach Soup
serves 6 generously
4 cups chicken stock
2 cups water
1 can cannelini beans, drained and rinsed
1 can cannelini beans, drained, rinsed, and mashed
1 cup regular or quick barley
1 lb cooked chicken sausage cut into coins
large handful of washed and chopped spinach (frozen works fine)
toss everything in the crock pot and cook on low a few hours until the barley is done. If you're pressed for time, heat the stock and water to boiling, add the quick cook barley and cook 10 minutes. Add everything else, and cook until heated through, about 10 more minutes.
