Pie!



Chocolate Fudge Pie

1 (9 inch) graham crust
1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups milk
3 egg yolks
2 tbsp cocoa
2 tablespoon butter
1 teaspoon vanilla

In medium saucepan, combine sugar, flour, cornstarch, cocoa, and salt. Separately, mix together milk and egg yolks. Stir milk/eggs sugar mixture. Whisk constantly over medium heat until mixture thickens and comes to a full boil. Boil for one full minute, stirring constantly. Remove from heat and stir in vanilla and butter until melted. Pour into pie shell. Cover with plastic wrap to prevent skin from forming and chill for at least 3 hours. Top with whipped cream and chocolate sprinkles.

It's a yummy pie. And it goes far - tiny slivers are required. It's not very sweet - might benefit from 1/8 cup more sugar. Next week maybe raspberry. Or a mixed berry. Or, wait! Peach Melba!
